Glycyrrhizic acid is a triterpenoid saponin obtained from liquorice root and used as a pharmaceutical and food ingredient, with the related aglycone glycyrrhetinic acid also appearing in medicinal products. Its impurity profile follows from the glycosidic structure and from extraction: hydrolytic cleavage of the sugar chain, oxidation and rearrangement products of the triterpene core, and related saponins co-extracted from the plant material all require examination.
