Fumonisin B2 is a mycotoxin produced by Fusarium moulds and commonly co-occurs with fumonisin B1 in maize and other cereals, so it is included in food and feed monitoring alongside its better-known analogue. A defined reference standard lets laboratories measure the two compounds independently instead of relying on cross-reactivity or assumed relative response factors. It is applied in LC-MS/MS method development and validation, preparation of calibration standards, recovery and matrix-effect evaluation in cereal matrices, and confirmation of contamination in survey and compliance testing. The substance has the formula C34H59NO14 and a molecular weight of 705.83 and is a white to pale beige solid.
