Earthiness in drinking water and in freshwater fish is usually traced to one compound, and (±)-Geosmin is the racemic reference material used for that determination. It is a bicyclic alcohol produced by actinobacteria and cyanobacteria, with formula C12H22O and molecular weight 182.30, occurring as a colourless liquid with a low odour threshold. Water utilities, flavour laboratories and environmental testing groups use it to prepare calibration solutions, to check headspace or GC-MS methods that must recover a volatile and partly lipophilic analyte, and to relate sensory findings to instrumental data.
